Freshness windows assume reasonable storage. Four variables determine whether you reach the upper or lower end of those ranges.

Airtight Container

The single highest-impact variable. Oxygen is the primary degradation mechanism. A sealed bag with a one-way valve or a ceramic container with a tight-fitting lid reduces oxidation significantly.

Cool, Dark Location

Heat accelerates oxidation. A cupboard or pantry away from the stove is ideal. Direct sunlight adds heat and UV exposure, both of which degrade aromatic compounds faster.

Avoid the Refrigerator

Cold slows oxidation, but refrigerator humidity and food odors create new problems. Coffee absorbs moisture and odors readily. Room temperature storage outperforms refrigerator storage for most home conditions.

Freezer Is the Exception

Long-term storage over one month can work if coffee is portioned into airtight freezer-safe bags before freezing. Thaw once, use completely. Repeated freeze-thaw cycles cause condensation damage.
