Whole Bean — Base Window

From roast date, stored in an airtight container. CO₂ off-gassing slows oxidation. The sealed bag valve is there for a reason.
Ground Coffee — Base Window

Grinding increases surface area by up to 10,000×. Oxidation accelerates dramatically. Grind immediately before brewing whenever possible.
